Now, how can I not love you bloody English?

The Ship Damansara.

I was working here 27 years ago as a waiter. I remember shying away from customers when they tried to order their food and drinks in English.

I couldn't even understand "can I have a fresh orange please". That was the moment of change when I said to myself, "I need to conquer this bloody language".

With determination, I embarked my love affair with English through a loyal friend called Dictionary. The affair then led my path to move to the country!

I am now married to Dictionary in a happy triangular fashion with English. I still go to the Ship whenever I am in need of that nostalgic piece of steak.

Yes, I know there are other places that serve much better pieces of meat but nothing beats a love story that changed the path of your life! Now, how can I not love you bloody English?

The idea is traditional but the cooking is forward thinking, not trendy.

Perfect slices of roast beef are not 'hipster'. 

They are old school done with passion, technique and honesty. 

They are not fashionable!

"Chef, soto you memang sedap! Tapi satu je kurang."

"Apa dia?", tanya saya.

"Begedil" jawab si pelanggan sambil tersenyum.

Saya membeliakkan mata dan menutup mulut! Terkesima dengan kelalaian sendiri. Saya mengakuinya seraya terpacul perkataan "Maaf" kepada si Pelanggan.

Esoknya kami di The Canteen by Chef Adu terus membuat begedil untuk melengkapkan Soto kami.

Komen yang begini amat saya hargai kerana ianya ikhlas dan disampaikan terus kepada saya.

Saya tidak sempurna. Acap kali saya akan menyapa pelanggan bertanya khabar dan minta feedback tentang apa yang dihidangkan. 

Lebih afdal jika 'ketidakpuasan hati' dilemparkan ke muka saya bila saya bertanya. Lebih 'mulia' dari bila berdepan semuanya ok dan kemudiannya 'mengomel' di FB atau insta mereka.

Alhamdulillah selama 5 minggu saya menghambakan diri mengambil pesanan, membuat air, menyedikan makanan dan membasuh pinggan, hanya satu saja komen yang agak menyentuh hati k ulinari dipaparkan di muka FB.

Saya sudah 23 tahun memasak, namun masih peka dengan ilmiah dan kehendak manusia yang kekadang amat demanding.

Dalam hidup ini ada yang suka, ada yang benci.

Itu lumrah.

So, as I used to say in my restaurant in London (uolssss!) if you like our restaurant, tell your friends, if there's anything wrong tell US!" 🙏🏽🙏🏽🙏🏽

A wasted talent is such a sin!

All our lives, the 8 siblings in my family make a living out of whatever talents we have. Only one in 8 has a master degree and I was honoured an honorary degree. The rest don't have one. Even the master-degreed one is using his talent as he is an architect.

Apart from cooking, I paint, used to dance, I do interior and will be singing (InsyaAllah) in near future. That's why I always believe that a wasted talent is such a sin!

They call it a 'control freak' I call it a super-passionate-genuine-soul.

The Canteen by Chef Adu is an extension of myself. Everything you see, feel listen to are all picked up, created, chosen by me. 

All literally hand-picked. I still go to source for furniture, fabrics and flowers.

Not forgetting the market to make sure only the best quality of ingredients enter my pots and pans!

Of course I have great help by my lovelies such as @syaerdean @anna_chan52 @hassanazizah @apek74 @razakamin and of course @ruzzgahara.

Nothing and nothing about me has changed.

Shooting for Majalah Nona Raya Edition yesterday at The Canteen by Chef Adu

I am happy now that I have a 'permanent' job, a home and an office. The more I think about it the more I realise nothing about me is business.

The business part if any is just to be able to work to make ends meet, for survival, family and life really.

The older I get the more I become like my Abah! Not materialistic, super humble and just happy with the minimal stuff he has. The major thing for him is his family!

Now, I still go to work everyday, cooking, serving, entertaining, getting my pic taken, washing the dishes with my sister and staff. I still don't have a fancy car. @syaerdean still drives us to work. I am still renting my place from my brothers.

Nothing and nothing about me has changed.

Best thing is with all the worries I am very happy. I am loved by all the important people!.🙏🏽

Without respect you can't love!

Food is my life along other passion and love I posses. I don't quite believe that we have to cook with 'kasih sayang' but more so cook with 'respect'.

Respect ourselves for cooking, respect the food we are cooking, respect the people we are cooking for and respect the satisfaction from both parties!

Now, that's much more than 'kasih sayang' as without respect you can't love!
